Camp-Style Walleye
- Butter
- Lemon juice
Aluminum foil
Put 2 fillets in aluminum foil. Put a few pats of butter on each fillet. Salt and pepper to taste and sprinkle with lemon juice. Fold aluminum foil to seal fillets and grill for 10 to 15 minutes or until fish flakes with a fork.
Pan-Seared Walleye
- 1 T. Old Bay Seasoning
- 1 t. garlic powder
1/4 c. pecan meal or very finely ground pecans
Dash of fresh ground black pepper or cayenne pepper
- fresh squeeze of lemon
Mix the flour, ground pecans, garlic powder, Old Bay Seasoning and the black or cayenne pepper in a bowl or on a large plate. Rinse the fillets and remove excess water by patting dry with paper towels. Dredge the fillets through the mixture, coating both sides. Place the olive oil in a large no-stick skillet and bring to medium/medium-high temperature. Drop fillets into pan and squeeze lemon juice on them. Sear them quickly on each side, approximately 4-6 minutes on each side, although the cooking time can vary based on the temperature of the pan while cooking.
