NORTHWOODS COOKS: Goodies from the Faith Baptist cookbook

In the days before almost any recipe could be found online, often accompanied by a video showing exactly how to make it, many churches sold cookbooks as fundraisers. In addition to showcasing favorite recipes of local cooks, they often included church history.

Faith Baptist Church of Park Rapids put out a cookbook, called "Faith Bites," with an introduction telling how the church was first started in 1968 with 40 charter members. Located on Hwy. 71 south, the church has continued to grow in both size and membership under its current name of Faithbridge. Here are a few recipes for snacks and treats from their 2012 cookbook.

Patti Schrader's Peanut Butter Granola

3/4 cup oil

2 cups chunky peanut butter

1-1/2 cups honey (or 3 cups brown sugar)

15 cups oatmeal

3 cups raisins (optional)

Stir oil into peanut butter, then stir in honey or brown sugar. Add oats and stir until well mixed. Spread on baking sheets or in cake pan. Bake at 300 degrees for 15 to 20 minutes, stirring occasionally. Add raisins when cool.

A note under this recipe says it is dad's favorite!

Lydia Schrader's Snickerdoodles

Mix together:

1-1/2 cup sugar

1 cup butter, softened

2 eggs

2-3/4 cups flour

2 teaspoons cream of tartar

1 teaspoon salt

Form dough into balls.

In a different bowl mix:

3 tablespoons sugar

3 tablespoons cinnamon

Roll dough balls in cinnamon and sugar mixture. Bake at 400 degrees for 8 to 10 minutes.

Grace Erb's Butterscotch Krispie Bars

3 cups Rice Krispies

1/3 cup peanut butter

2 cups butterscotch chips

Melt chips in microwave until smooth. Stir in peanut butter. Mix well and add cereal. Put in buttered 8-inch square pan. Cool and cut into bars.

Sue Vanderwal's Monster Bars

1/2 cup butter

1 cup brown sugar

3/4 cup to 1 cup white sugar

1-1/2 cup peanut butter

3 eggs

1 teaspoon vanilla

4-1/2 cups oatmeal

2 teaspoons baking soda

3/4 cups chocolate chips

1 cup mini M&Ms

Mix together and bake at 350 degrees in a greased 11-by-13-inch pan for 11 to 16 minutes.

Laura Becker and LaMae James' Frosted Banana Bars

1/2 cup butter, softened

3 eggs

1 teaspoon vanilla

1 teaspoon baking soda

2 cups sugar

1-1/2 cups bananas

2 cups flour

Pinch of salt

In a mixing bowl, cream butter and sugar. Beat in eggs, bananas and vanilla. Separately combine flour, baking soda and salt. Add to creamed mixture and mix well. Pour into greased 10-by-15-inch pan. Bake at 350 degrees for 25 minutes, or until bars test done. Cool before spreading frosting over bars.

Frosting:

1/2 cup butter

8 ounces cream cheese

4 cups powdered sugar

2 teaspoons vanilla

Cream butter and cheese. Gradually add powdered sugar and vanilla. Spread over bars.
