Father's Day is this weekend. Many dads will be treated to dinner out, but a home-cooked meal is also a nice way to celebrate.

Here are some of my dad's favorite recipes. A meat-and-potatoes man, my mom makes them for him throughout the year and on special occasions.

Mom's Meatloaf

1 pound lean hamburger

1 egg

1/2 cup dry bread crumbs

1/4 cup ketchup

2 teaspoons minced onion

salt and pepper to taste

Mix all together, put in loaf pan and bake for 1 hour at 350 degrees.

Green Bean Casserole

1 can green beans

1/2 cup cream of mushroom soup mixed with 2 tablespoon half and half or whole milk

Crispy fried onions from a can

Mix all together. Put in a casserole dish and mix in crispy fried onions. Bake at 350 degrees for 30 minutes or until hot. Top with crispy onions and bake for 5 more minutes or until golden.

This recipe is for one potato and can be multiplied to make larger amounts.

Twice-Baked Potatoes

1 potato per person

2 pieces of lean bacon

1 tablespoon softened butter

3 tablespoons half and half or whole milk

Minced dry onions

Shredded cheddar cheese

Wash and prick potatoes with a fork in several places. Bake in a 350 degree oven for 1 hour and 15 minutes. While potatoes are baking, fry bacon until crisp and break into small pieces. Take potatoes out of oven and cut an oval on the top of each potato. Scoop out each potato and put the scooped potato in a bowl. Using a mixing bowl with paddle attachment, mix 1 tablespoon softened butter (more if needed), 3 tablespoons half and half or whole milk and minced dry onions to taste. Beat until potatoes are well mixed and creamy. Add some shredded cheddar cheese and bacon bits to potatoes and mix well. Scoop some of the potato mixture into each potato shell. Bake until cheese on potatoes is golden brown.

Pumpkin or Squash Pie

9-inch deep dish pie crust

3 beaten eggs

1 cup white sugar

1 tablespoon molasses (optional)

3 tablespoons flour

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon ginger

Combine above ingredients and mix well. Add 2 cups of pumpkin or squash and 1-1/4 cup of half and half and blend well. Pour into unbaked pie shell. Bake at 450 degrees for 10 minutes, then 350 degrees for 40 to 45 minutes or until a knife inserted into the middle of the pie comes out clean.
