The conclusion reached in this editorial assumes there are no options available which could increase profitibility for the on-sale operations, which there are many. (open Sundays, late closing hours, labor re-assessment where PT positions might replace FT w/benefit situations, etc). While some of these may seem like drastic measures, closing the on-sale operation altogether would be far worse. (Not to mention there's no guarantee the off-sale would continue to be profitable at all as a stand-alone business).
